sunday morning, i woke to the theme song to one of my favorite shows of all time - new scandinavian cooking with andreas viestad (although, all the scandinavian cooks are great, i just own the dvd seasons with andreas, thanks to doug). i was so excited that i actually leapt out of bed, running to the den to find my two favorite people curled up together with their arsenal of dvds lined up and ready for a peaceful morning. so i curled up too, but only for a bit before i got inspired to do something i rarely do - make a good breakfast. there's just something about that show that's so inspiring to me; the landscape is always incredible and the recipes are fresh and simple. whether it's food from the the show or book, we've never been disappointed.
there was an episode from the second season all about smoked fish, where andreas made smoked salmon and eggs. the recipe seemed especially easy and fast, which was essential since watching cooking shows makes you starving! doug almost convinced me to run to the grocery store and pick up some salmon, until i remembered that i had bacon on hand. it was a great substitute, and very kid friendly. now i can't wait to make them again, but this time sticking to the recipe.
